Appealing Apple Caramel Pie - 2007 NPC 1st Place Apple

Crust

? 2 cups all-purpose flour
? 1/2 teaspoon salt
? 2/3 cup Crisco shortening
? 1 teaspoon vanilla extract
? 6 tablespoons cold water
? Brush top crust with milk and sprinkle sugar

Directions:
Mix flour and salt in large bowl. Blend in Crisco and add vanilla extract and cold water. Mix until dough is moist. Form dough into a ball and divide in half. Wrap dough in plastic wrap and refrigerate for 30-40 minutes.

Roll out bottom crust on wax paper, sprinkling the dough and wax paper with flour. Lift dough into pie pan and gently press into the bottom of the pan. Place dots of butter on top of bottom crust, then fill with apple filling.

Roll out top crust on wax paper, sprinkling flour on the wax paper and dough. Cut the dough into approximately ½” strips. Lay the first two strips in an “X” shape in the center of the pie and lay the rest of the strips around the pie, alternate adding strips in one direction and then the other, overlapping and weaving each time.

Trim the dough edges and fold the edge of the top crust lattice over the pie pan edge and pinch to seal. Brush top crust lattice with milk and sprinkle sugar on top.




Filling

? 8 apples
? 2 tablespoons flour
? 1 cup sugar
? 1 teaspoon mixed spice
o cinnamon, ginger, nutmeg, allspice
? 2 tablespoons butter
? Add dots of butter to top of apple filling before placing top crust on pie
Directions:
Slice apples. In a medium-sized bowl, combine flour, sugar, mixed spice and butter. Add apple slices and mix well. Place in a 9-inch pie pan lined with the bottom crust and dot apple filling with butter. Place top crust lattice on pie (see directions above). Bake at 4000 for about 50 minutes or until crust is golden. Just before serving, drizzle caramel on top.

Prep Time: 60 minutes
Bake at 4000 for 50 minutes
