Preheat oven to 375 Crust: 1 1/4 cup graham cracker crumbs 1/4 cup sugar 5 TBS butter Mix all ingredients and press mixture into 9" pie plate. Bake for 8-10 minutes or until brown. Allow to cool to room temperature. Lime Layer: 1 14 oz can of sweetened condensed milk 1 egg 1/2 cup lime juice Mix ingredients and pour the mixture into cooled pie shell. Bake for 15 minutes. Remove from oven and chill in refrigerator for 2 hours. Chocolate Layer: 2 TBS butter 2 TBS corn syrup 1 TBS heavy cream 1 TBS milk 1/3 cup chocolate chips (semi-sweet) 1 cup powdered sugar Mix butter, corn syrup, cream and milk and heat over medium heat until boiling. Stir constantly. Add chocolate chips and stir until melted. Once fully combined, slowly add powdered sugar. Mix completely, then carefully spread the chocolate onto the lime layer. It cools quickly, so you must spread immediately. Topping: 2 1/2 cups heavy cream 1/4 lbs white chocolate (broken into small pieces) Bring 1/2 cup of cream to a boil over medium heat. Add white chocolate and stir constantly until chocolate is melted. Remove from heat and let cool to room temp. Refrigerate for four hours. In large bowl, beat the remaining cream until soft peaks form. Slowly add the white chocolate mixture and continue to beat until stiff. Cover and refrigerate for 2 hours. Garnish with lime slices if desired. Serves 8.
