Elvis Would Love Banana Peanut Butter Pie

Crust:
3 Cups flour
1 cup White Crisco
1/4 cup butter flavored Crisco
1/2 tsp salt
1/2 tbsp sugar
1 egg
2 Tsp White Vinegar
5 Tbsp. Ice water

1) In large bowl, mix flour, salt and sugar. With a pastry blender, cut in crisco until pea size.
2) Beat together egg, vinegar, and water, Mix liquid with flower mixture with a fork until mixture forms a ball. NOTE- add liquid one tablespoon at a time. You may not need to use it all.
3) Roll out on lightly floured board. This recipe makes one double pie crust-Refrigerate left over for later use.
4) For this pie, fit crust on bottom and up sides of 9 inch pie plate. Finish edges. Line shell with foil and pie weights.
5) Bake at 400 degrees for 20 min. Remove weights and foil continue baking at 350 degrees until browned.
6) Let cool.

Filling:
9 inch baked pie crust
1/2 cup granulated sugar
1/4 cup cornstarch
2 cups half-and-half
4 large egg yolks
3 Tbsp butter
2 Tbsp Creamy peanut butter
2 tsp. Vanilla extract, divided
2 medium bananas
2 cups heavy cream
1/2 cup powdered sugar
2 Tbsp Vanilla Instant Pudding and Pie filling


Garnish: Halved peanut butter sandwich cookies.

1) Whisk together granulated sugar and cornstarch in a large saucepan.
2) Whisk together half-and-half and egg yolks in a medium bowl.
3) Gradually whisk half-and-hald mixture into sugar mixture, and bring to a boil over medium heat, whisking constantly.
4) Boil, whisking constantly, 1 minute, remove from heat.
5) Stir butter, peanut butter, and 1 tsp. vanilla into sugar mixture.
6) Place heavy-duty plastic wrap directly on warm custard (to prevent a film from forming) and cool 30 minutes.
7) Cut bananas into 1/2-inch thick slices, place in a single layer on bottom of crust, covering bottom completely.
8) Spoon custard mixture over bananas, cover and chill 4 to 48 hours.
9) Beat cream at high speed with an electric mixer until foamy, gradually add powdered sugar and 2 Tbsp Vanilla Instant Pudding and Pie filling and remaining 1 tsp. vanilla, beating until soft peaks form.
10) Top pie with whipped cream mixture.
