Strawberry shortcake pie

• Cream cheese pie crust
o 6 tablespoons of butter unsalted
o 1 cup of all-purpose flour
o 1/8 teaspoon baking powder
o ¼ cup of cream cheese
o 1 tablespoon of ice water
o 1 ½ teaspoon of apple cider vinegar
• Vanilla cake
o 1 cup all-purpose flour
o 1 teaspoon baking powder
o 1/8 teaspoon salt
o ¼ cup of room temperature milk
o 1teaspoon of vanilla extract
o ¼ cup of room temperature unsalted butter
o ¾ cup sugar granulated
o 2 large room temperature eggs
• Strawberry jam
o 2 pounds of washed and cut strawberries
o ½ cup sugar
o ¼ pectin
o ¼ lemon juice
• Vanilla bean mousse
o 113 grams of milk
o 88 grams of heavy cream
o 1 vanilla bean
o 62 grams of sugar
o 90 grams of yolks
o 8 grams of gelatin
o 250 grams of heavy cream whipped to soft peak
• 1-2 pints fresh strawberries
• Clear glaze
• Cream cheese pie crust
1. Combine all dry
2. Add cold butter cubes
3. Add water and cider vinegar
4. Refrigerate and let rest overnight or a few hours
5. Roll out dough, place in pan
6. Bake at 350 degrees Fahrenheit until light brown for 10-15 minutes
• Vanilla cake layer
1. Combine dry ingredients and mix
2. Cream butter and sugar until pale and fluffy, add eggs
3. Mix wet ingredients together
4. Add dry alternating with wet
5. Bake on sheet pan at 350 degrees Fahrenheit 10 minutes
6. Cool and cut out 8-inch circle
• Strawberry jam
1. Combine strawberries, lemon juice and simmer
2. Combine sugar with pectin, add to fruit and continue to simmer until think
3. Cool
• Vanilla bean mousse
1. Make anglace
2. Add melted gelatin
3. Cool in ice bath to body temperature
4. Fold and soft with whipped cream
• Build
1. Place thin layer of vanilla bean mousse in crust
2. Place one layer of vanilla cake on top of vanilla bean mousse
3. Follow with strawberry jam
4. Add another layer of vanilla bean mousse
5. Top with fresh strawberries
6. Glaze fresh strawberries
