Louisiana banana cream pie

• 6-8 large bananas
• Graham crust
o 3 cups of crumbs
o ½ cup of ground pralines
o ¼ cup of unsalted butter
• Pastry cream
o 1 cup of milk
o ¼ cup of sugar
o 3 yolks
o 2 tablespoons of cornstarch
o 1 vanilla bean

• Graham crust
1. Mix all ingredients together and press
2. Bake 350 degrees Fahrenheit for 10 minutes
3. Cool
• Pastry cream:
1. Simmer milk and vanilla bean
2. Combine milk, sugar and cornstarch
3. Continuously stir until thick
4. Strain and cool
• Build pie
1. Put small amount of pastry cream in crust
2. One layer of sliced bananas
3. Continue to layer pastry cream and bananas until pie crust is full
4. Top pie with fresh whipped cream and pralines
