Recipe for "CHRISPY CHRISTIE'S ROSY RED RHUBARB PIE"
(In Honor Of NJ Gov. Christie's Effort)
Ingredients
Crisco
flour
Salt
Fresh Rhubarb
Brown and White sugar
Corn Starch
Cinnamon
Butter
Milk
Lemon Juice
Cut Rhubarb Red Stalks into 1/2 inch Cubes
place in Bowl along with
1/3 cup of Lemon Juice
1 cup Brown Sugar
1 cup White sugar
1/3cup Corn Starch
1 Tspn. Cinnamon
Pinch of Salt
Blend in all ingredients making sure all Rhubarb is completely coated with dry ingredients
Place 1 Cup of Crisco
3 Cups Flour
Pinch of salt
In another Bowl and using a pastry blender, blend until it looks like a bowl of white peas
Sprinkle ice water over dry ingredients and with a fork form a ball.
Divide in Half.
Grease a 9" pie pan,
Turn oven to 400 degrees
Roll out pastry ball, place in pie plate. Pour Rhubarb mixture into bottom crust,dot with 2 pats of butter, take milk to coat the edge of bottom crust to make a good seal
Roll out 2nd pastry ball and place it on top of Rhubarb mix., seal top and bottom crusts, trim and crimp edges. Coat the top crust with milk, small pieces of butter, and Brown sugar, make many slits in top crust
Place in oven for. 30 minutes, then reduce oven to 350 degrees for 50 more minutes, now is a good time to Slide some foil under to catch boiling rhubarb drips
