Hula Hula Pineapple Cream Pie with fried pie crust by Andrea Spring
CRUST
1/2 cup butter
1/2 cup shredded coconut
1 cup all purpose flour
3 T light brown sugar
Combine butter, coconut, flour and brown sugar in sauce pan. Cook on medium heat until mixture is medium brown, stirring frequently. Pour into 10 pie pan and press to cover bottom and sides. Chill 10 minutes before filling.
FILLING
1- 20 oz can crushed pineapple with juice
1-12 oz tub Cool Whip
1-6 oz package Jello pineapple gelatin
6 oz whipped cream cheese
Drain pineapple. Reserve juice. Combine gelatin with juice and microwave for one minute. In medium bowl mix whipped topping and cream cheese until smooth. Add pineapple and gelatin mixture. Blend well. Spoon into pie shell. Refrigerate for 4 hours or until set.
