Crazy Quilt Apple Pie

Crazy Quilt Apple Pie:

(Short Bread Crust)
1 Cup Butter (Room Temperature)
½ Cup White Sugar
1 tsp Vanilla Extract
Cream the butter and sugar, add vanilla and flour. Press into 10” pie pan and chill.

(Cream Cheese Layer)
8 ounces Cream Cheese (room temperature)
2 tablespoons Sour Cream
½ Cup Sugar
1 egg
1 teaspoon Vanilla Extract
1/8 Teaspoon Salt
Mix Cream Cheese, Sour Cream and Sugar, add Egg Vanilla and salt, mix well.
Pour Cream Cheese Layer into Prepared Crust and bake in pre heated 325 degree oven for 30 minutes or until set.
Apple Layer:
2 Cups Peeled Apples, Coarsely Chopped
1 Cup Apple Juice
½ Cup White Sugar
½ Teaspoon Cinnamon
2 Tablespoons Cornstarch
4 Tablespoons Apple juice (Room Temperature)
Poach Apples in 1 cup Apple Juice until Tender
Pour off any excess Apple Juice
Add Sugar and cinnamon to Apples
(In separate bowl), mix cornstarch and the 4 Tablespoons of apple Juice, and add to poached Apples.
Cook for stovetop for several minutes until thickened.
Cool for several minutes and pour over top of cheese layer.

Sugar Pecan Crum Topping:
1/3 cup Shortening
1/3 cup Butter
¾ cup White Sugar
1 whole egg
1 ¾ cups Flour
1tsp Baking Powder
½ Teaspoon Salt
1 Teaspoon Vanilla
½ cup Chopped Pecans
Combine Shortening, butter and sugar, mix in egg, and mix in remaining ingredients.
Divide Crump Topping in half, Crumble half of the mix over the apples.
Bake for 6 minutes at 325 degrees and refrigerate.
Serve Cold
