De Leche Peanut Butter Banana Pie

Ingredients:
Crust
3 cup ground Chocolate Sandwich cookie with the Cream Filling
8 tbs butter

Combine cookies in a food processor and grind them to a crumb. Pour them into a bowl. Melt butter and mix it into the crumb. Press 2 ½ cups of crumb into each 10” pie pan, use the back of a spoon to form the crumb into a crust. Take a smaller empty pie pan and press it into the pie pan with the crumb and press firmly. Remove empty pan and bake crust for 4 minutes in a 350 degree oven. Remove and let cool.

Peanut Butter Filling:
1 cup Peanut Butter
2 8 oz pack Cream Cheese
¾ cup sugar
5 oz White Chocolate Chips, Nestles works very well
2 ¼ cup Heavy Whipping Cream
7 or 8 oz marshmallow fluff
1 tbs Instant Clear Jel, from King Arthur Flour
¼ cup Sugar

Using a heavy sauce pan bring ½ of heavy cream to a simmer, remove from heat. Place the White Chocolate in a bowl and pour the hot milk over the chocolate. Let sit for a few minutes, gently stir until smooth and creamy. Beat Cream Cheese and sugar with a stand mixer until smooth. Scrape the walls and beater, beat again for another minute. Mix in Chocolate mixture, mix for a minute, add peanut butter and marshmallow fluff mix until blended. Whip 2 cups Heavy Cream with ¼ cup sugar and 1 tbs of Instant Clear Jel to stiff peaks, fold in Cream Cheese mixture to the whipped cream.

De Leche Caramel:
1 ¼ cup Sugar
1 ½ tsp Baking Soda
1 cup heavy cream
½ cup Butter
1 tbs Corn Syrup
2 tsp vanilla
1 tsp butter flavoring

Bring all the ingredients but the vanilla to a boil in a large sauce pan. Boil for 3 minutes while stirring constantly until the sauce turns a golden color. Remove from heat and add Vanilla, and Butter. Cover with plastic so the plastic touches the caramel to prevent a skin from forming. There are good store bought caramel you could use instead of making homemade caramel.

Layer whole banana in the bottom of the pie, drizzle caramel on the banana but do not drench them. Pour fluffy peanut butter pastry cream on bananas. Cool in the refrigerator for 4 hours. Garnish pie with fresh chocolate whipped cream, drizzle with peanut butter chocolate and banana chips.
