Back Porch Caramel Drizzled Apple Pie

2 cups finely ground oatmeal cookies
3 tablespoons sugar
7 tablespoons butter, melted

Preheat oven to 375 degrees. Lightly spray a 9.5-inch deep pie plate with nonstick cooking spray. In a large bowl, combine ground cookie crumbs, sugar and butter until well combined. Press mixture onto bottom and up the sides of pie plate. Bake 6-8 minutes or until crust is lightly toasted. Remove from oven; let cool.

Caramel layer:
1 (8 ounce) cream cheese
3 tablespoons light brown sugar
1/3 cup caramel coffee creamer
2 eggs
1/2 teaspoon vanilla extract or vanilla paste

In a bowl, beat cream cheese and light brown sugar. Gradually, beat in creamer until well combined. Beat in eggs and vanilla. Pour into crust. Bake at 350 F for 15-20 minutes or until edges are set and center jiggles slightly.

Streusel Topping:
1 cup flour
1/2 cup light brown sugar
1/4 cup sugar
1/2 cup butter

In a bowl, combine flour and sugars. Cut in butter until mixture forms lumps the size of small peas. Spread out onto a small baking sheet. Bake at 375 F for 15-20 minutes or until lightly toasted. Remove from oven; let cool. Sprinkle half of streusel topping over caramel layer.

Apple layer:
1/2 cup sugar
1/4 cup cornstarch
Pinch salt
1 cup caramel coffee creamer
4 egg yolks
2-3 tablespoons bourbon or 1 teaspoon vanilla extract
1 tablespoon butter
1/4 teaspoon ground cinnamon

In a medium saucepan, over medium heat, combine sugar, salt, and creamer. Whisk in egg yolks and bourbon. Bring to a boil; let boil about 1 minute, whisking until mixture thickens to a pudding consistency. Remove from heat. Stir in butter, cinnamon, and 1 1/2 cans of apple filling. (Reserve remaining apple filling for topping.) Spread over streusel on caramel layer, to cover completely. Press a sheet of plastic wrap directly on the surface. Refrigerate 4-5 hours to set and firm.

Reserved streusel

Spread or pipe whipped cream over top of pie. Top with remaining apple filling; drizzle with caramel. Sprinkle with reserved streusel.
