Streusel Topped Pumpkin Pie

Pie Crust:

1 1/3 cups all purpose flour
1/2 teaspoon salt
2 teaspoons granulated sugar
1/2 cup well-chilled vegetable shortening
3 to 4 tablespoons ice cold water

Pie Filling:
1/2 cup granulated sugar
¼ cup light brown sugar
1 1/2 teaspoon corn starch
½ teaspoon salt
1 3/4 teaspoon pumpkin pie spice
2 large eggs
1 can (15 oz.) pumpkin puree
¾ cup evaporated milk
¾ cup International Delight Pumpkin Spice Coffee Creamer

1/3 cup brown sugar, packed
1/3 cup all purpose flour
½ teaspoon cinnamon
3 Tablespoon butter
¼ cup chopped pecans
¼ cup chopped walnuts

Pie Crust: Preheat oven to 425 degrees. In medium size bowl, mix flour, salt and sugar. Cut shortening into flour mixture until particles are the size of small peas. Sprinkle in ice water, 1 tablespoon at a time, tossing with a fork until all flour is moistened and a ball of dough can be formed. Add more water if necessary. Refrigerate dough until ready to roll. On a lightly floured surface roll dough from center outward into a circle 2-inches wider than pie plate. Carefully transfer dough to pie plate. Trim edges of dough leaving a 3/4-inch overhang. Fold edge under. Flute dough as desired. Line crust with parchment paper and add pie weights. Par-bake crust 10 minutes. Remove from oven and place on cooling rack to cool.

Pie Filling: Mix sugars, salt, pumpkin pie spice in a small bowl. Beat eggs in a large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk and coffee creamer.

Pour into pie shell. Bake in preheated 425° oven for 15 minutes. Reduce temperature to 350°; continue baking for 40. In the meantime, make streusel topping.

Streusel topping: In medium mixing bowl, combine brown sugar, flour and cinnamon; cut in butter until crumbly. Stir in nuts. Set aside.

Remove pie from oven; top evenly with streusel mixture. Return pie to oven 15 - 20 minutes or until streusel is golden brown. Cool. Store covered in refrigerator.
