It's Your Clucky Day Chicken Pot Pie


Pastry Crust:

1 cups flour
1/2 cup shortening
1/4 cup cold water
Pinch of salt

Cut shortening into the flour until the particles are the size of small peas. Dissolve the salt into the ice cold water. Sprinkle in the water until the flour mixture is moistened. Gather the pastry into a ball and refrigerate overnight. Roll out on a floured surface. Fold the pastry into quarters, unfold and ease into a 10 inch pie pan.
Filling Ingredients:

4 chicken thighs, cooked, boned, skinned and cut into 1 inch cubes
½ medium onion, chopped
2 tablespoons butter
4 fresh baby bella mushrooms, cut in half
2 large carrots, sliced into ½ inch pieces
1 stalk of celery, sliced into ½ inch pieces
1.2 cup chopped frozen broccoli
½ cup chicken broth
¼ tsp parsley flakes
½ teaspoon dry mustard
½ teaspoon fresh basil, minced
¼ teaspoon garlic powder
1/8 teaspoon black pepper
1 tablespoon Worcestershire sauce
1 ¼ tablespoon cornstarch
1 tablespoon water
1 can cream of mushroom soup
½ cup sour cream
¼ cup shredded Swiss cheese
¼ cup shredded sharp cheddar cheese
½ cup parmesan cheese

Cut the cooked chicken thighs into bite-size pieces. Saute the cooked chicken and onion in butter in a large skillet for 5 minutes. Add the mushrooms, carrots, celery, broth, seasonings and Worcestershire sauce. Cover and simmer for 10 minutes. Combine the cornstarch and water, blending and stirring into chicken mixture. Cook over medium heat, stirring constantly until it thickens. Remove from heat and stir in soup, sour cream , frozen broccoli and cheeses. Pour the mixture into the pie crust.
Roll out the remaining crust for the top and place over the filling mixture. You can either top with a whole crust or do a lattice crust over the top of the filling. It might be easier to do the lattice top if you cool the filling mixture before putting it over the bottom crust. Bake at 400 degrees for 30 to 40 minutes or until brown and bubbly. Cool for 5 minutes before serving. Pie serves about 5-8 people, depending on the pie size.
