Calamondin Pie

Crust
1 ½ cups graham cracker crumbs
1/3 cup packed light brown sugar
7 tablespoons unsalted butter, melted
For the crust: Preheat oven to 325. Stir together crust ingredients. Press mixture into bottom and sides of a 9” pie plate. Bake for 10 minutes. Cool completely before filling.
Filling
5 egg yolks
1 can sweetened condensed milk
½ cup freshly squeezed calamondin juice
For the filling: Preheat oven to 375. Whisk all ingredients together. Pour into cooled crust. Bake for 15 minutes. Cool to room temperature and refrigerate until chilled.
