Pineapple Right Side Up Pie

Pineapple Right Side Up Pie

Crust:
3 cups King Arthur Perfect Pastry Blend flour
1 tsp salt
1 stick Crisco
1 stick butter
1/3 cup sugar
1 egg
5 Tbsp cold water
1 Tbsp apple cider vinegar
Cut together flour, salt, shortening, butter and sugar until oatmeal like consistency. Beat egg in cup, add water and vinegar. Beat all and pour into flour mixture. Blend well. Roll out half of the dough and place in 9” deep dish pie plate.

Filling:
5 Cups fresh pineapple cut into cubes (about 1 large pineapple)
5 Tablespoons corn starch
1 4oz. package Island Pineapple jello
1 Cup water
1 Cinnamon Stick
1 Cup sugar
Place the pineapple, sugar, and cinnamon stick in a large pan. Turn the heat to low. In a small bowl combine the cornstarch, jello and water until the corn starch is dissolved. Pour into the pineapple mixture and stir. Keep cooking the pineapple mixture until it becomes thickened and transparent in color. Cook another 5 minutes. Remove from the heat and allow to cool completely. Pour in pie shell and bake at 350 degrees for 30 minutes.

Topping:
½ cup butter
1 cup brown sugar
Melt the butter in a sauce pan. Add the brown sugar and cook until sugar is completely dissolved. Pull the pie out of the oven and pour the brown sugar mixture over the pie. Return to the oven and continue baking another 20 minutes. Place 4 pineapple rings on top of the brown sugar mixture and place a cherry in the middle of the pineapple ring. Bake 10 more minutes and remove from the oven. Allow to cool completely.
