The Evil Queen's Chocolate Pie

The Evil Queen’s Chocolate Pie

Movie Theme

Crust:
1 cup Oreo cookie crumbs
½ cup chocolate graham crackers
4 Tablespoon unsalted butter, melted

Mix all of the ingredients in a bowl until blended; pour into a 9” pie dish sprayed with Crisco cooking spray. Press into the bottom and sides; bake in a 350 F oven for 8-12 minutes.

Chocolate Cream Filling:
2 T butter, unsalted
1 1/3 cup 45% dark chocolate, chopped
1 teaspoon vanilla
2/3 cup sugar
3 tablespoon cornstarch
2 Tablespoon cocoa powder
1 teaspoon espresso powder
¼ teaspoon salt
3 eggs
1 ½ cups heavy whipping cream
1 ½ cups buttermilk

Filling:
Place the chopped chocolate, butter, and vanilla in a medium mixing bowl; set aside. In a medium sauce pan whisk together the sugar, cornstarch, cocoa, espresso, and salt. Whisk ¼ cup cold heavy whipping cream until the mixture is smooth, with no lumps. Repeat with another ¼ cup of the cream. Whisk in the egg yolks. Place the saucepan over the medium heat, and gradually whisk in the remaining cream and buttermilk. Bring to a boil, whisking constantly as the mixture thickens; boil for 1 minute. Remove the pan from the heat and pour the mixture over the chocolate and butter. Whisk until the chocolate is melted and the mixture is smooth. Pass the filling through a chinois into a bowl to remove any lumps. Place plastic wrap on the surface to prevent a skin from forming and chill thoroughly. Pour 1/3 of the chocolate filling in the bottom of prepared pie crust.

Almond Ganache:
2 cups Almond Chocolate
1 ½ cups whipping cream
1 teaspoon butter
2 Tablespoons corn syrup

Bring cream and butter to boil remove from heat and add Almond Chocolate stir and strain to remove imperfections in chocolate add corn syrup allow to cool before using.

Chocolate Mirror Glaze
4 Tablespoons dark chocolate
6 Tablespoons cocoa powder
6 Tablespoons heavy cream
2/3 cup water
1 cup sugar
2 Tablespoons sugar
3 -4 sheets of gelatin

Soak the gelatin sheets in cold water until soft. Combine the sugar, sift the cocoa powder, heavy cream and water in a saucepan. Bring to boil, stirring constantly. Remove from the heat; add the chopped dark chocolate, stir to melt, add the strained gelatin, stir until smooth and strain. Cool to room temperature.

A few extras needed for the pie:
1 cup almonds crushed and toasted
1 Jar of Carmel sauce
1 Jar of marshmallow fluff and cream cheese whipped together

Layer these ingredients between layers of the chocolate filling. Smooth out the top layer of chocolate filling, make as perfectly smooth as possible, leaving no lines or bumps. Pour the Chocolate Mirror Glaze over the top of the chocolate layer. Pipe a tight frame of ganache around the edge of the pie.






What inspired me to chose the movie theme Snow White? The Magic Mirror on The Wall revealed so much more than Snow White’s beauty and the Evil Queen’s desire to be the fairest of them all. All to often we look in a mirror and hope to see the best reflection of ourselves. Sometimes it seems that people forget to look for the inner beauty of others. We forget that the many layers that make them who they are as a person can define their true beauty. Or their hardships they have to endure will bring their inner warrior out of them that they never knew existed deep within them. This past Christmas, my sister was diagnosed with cancer and I had to face some health challenges of my own. We both desire that reflection to smile back, we need those inner layers that are our building blocks to be our strength, and with both both she and I can continue to be the Fairest Of Them All…Defeating the Evil Queen.
