Ramblin’ Red Raspberry Apple Pie

Apple
Crust:
2 cups all-purpose flour (sifted)
2/3 cup butter flavored shortening
1 stick chilled butter (cut into pieces)
3-5 Tablespoons ice water
For the crust. Sift flour into large bowl and then cut in shortening & chilled butter with a pastry blender until pea sized bits form. Gradually add in ice water until you can form a ball. Chill over night for best results.
1 ¼ cup of Jonathan apples (or your favorite)
2/3 cup fresh red raspberries
1 ¼ cup sugar
1 Tablespoon red raspberry Jello
1 teaspoon gr. Cinnamon
¼ teaspoon fresh grated ginger (optional)
3-4 Tablespoons cornstarch (or favorite thickener)
For the filling. Mix apples, sugar, Jello, thickener, and spices together thoroughly. Next, gently fold in fresh red raspberries and pour into prepared crust. Top it with your second crust in either a full or lattice top design and bake for 1 ½ hours or until crust is golden brown at 350 degrees.
