Boss Lady Blueberry Lemon Pie

Boss Lady Blueberry-lemon Pie

Comstock Blueberry

Crust:
1/3 cup brown sugar
¾ cup rolled oats
1/3 cup melted butter
For the crust, mix brown sugar and oats together in a small bowl until well blended. Next add the melted butter, press into a 10” deep dish pie pan, and bake for 5 minutes at 325 degrees.
Lemon Layer:
1 8oz. package of softened cream cheese
1 14oz. can of sweetened condensed milk
1/3 cup sour cream
1/3 cup fresh lemon juice
4 Tablespoons lemon zest
For the lemon layer. In a stand mixer beat cream cheese and condensed milk together until smooth. Next, add sour cream and whip together adding next the lemon juice and zest slowly. Pour into cooled crust and set aside in the fridge.
Blueberry filling:
2 blueberry Philadelphia cream cheese
1 cup whipped cream
½ cup fresh Blueberries
½ can of Comstock Simply Blueberry pie filling
The zest of half of a lemon (or all of a small lemon)
For the blueberry filling, mix the cream cheese and half of the blueberry Comstock together until smooth. Next add the fresh blueberries, whipped cream, and the lemon zest until well incorporated. Pour over set lemon layer, then spread the remaining Blueberry Comstock on top add lemon zest over the pie for garnish if desired. Chill for 2-3 hours and enjoy.
