Pretty Woman’s Pretty Neapolitan Pie

Hot Fudge Sauce
2 tablespoon unsalted butter
2/3 cup heavy or whipping cream
1/2 cup light corn syrup, golden syrup, or honey
1/4 cup packed dark-brown sugar
1/4 cup cocoa powder
1/4 teaspoon fine or table sea salt
1 cup semi- or bittersweet chocolate chips
1/2 teaspoon vanilla extract

Combine the butter, cream, corn syrup, dark brown sugar, cocoa, and salt in a small saucepan over medium heat and bring to a simmer. Simmer on low, stirring, for 3 to 5 more minutes after everything has melted, then remove from heat and stir in chopped chocolate or chocolate chips. Stir in vanilla. Strain through a fine mesh strainer. The sauce will thicken more as it begins to cool. Pour into a jar and refrigerate.

Strawberry Sauce

3 cups strawberries, diced
1 cup granulated sugar
2 tablespoons lemon juice

Combine strawberries, sugar, lemon juice in a medium saucepan and bring to a boil. Lower heat to a gentle simmer until the strawberries are soft and the syrup is thickened and reduced by 1/3 to 1/2 in volume, approximately 15-20 minutes, stirring occasionally. Sauce should appear fairly thick, but will thicken upon standing. If you want to thin it some, simply whisk in more water to reached desired consistency if needed. Pour into a jar and refrigerate.

Pie Crust:

1 1/3 cups all purpose flour
1/2 teaspoon salt
2 teaspoons sugar
1/2 cup well-chilled vegetable shortening
3 to 4 tablespoons ice cold water

Preheat oven to 425 degrees. In medium size bowl, mix flour, salt and sugar. Cut shortening into flour mixture until particles are the size of small peas. Sprinkle in ice water, 1 tablespoon at a time, tossing with a fork until all flour is moistened and a ball of dough can be formed. Add more water if necessary. Refrigerate dough until ready to roll. On a lightly floured surface roll dough from center outward into a circle 2-inches wider than 9” deep dish pie plate. Carefully transfer dough to pie plate. Trim edges of dough leaving a 3/4-inch overhang. Fold edge under. Flute dough as desired. Line crust with parchment paper and add pie weights. Bake 15-20 minutes. Remove parchment paper and pie weights and return to oven and bake 12-15 minutes or until the crust is a golden brown. Remove from oven and place on cooling rack to cool.

1 box (2.6 oz.) Dream Whip (2 envelopes)
1 cup of whole milk, cold
½ teaspoon vanilla
2 – 8 oz. packages of cream cheese, room temperature
2 cups of powdered sugar
1 teaspoon vanilla
1 packet unflavored gelatin
3 Tablespoon water

In a medium mixing bowl, add 2 packets of Dream Whip, 1 cup very cold whole milk and ½ teaspoon vanilla. Mix on low speed until blended. Beat on high speed for 4-5 minutes or until the topping thickens and forms peaks. Place in refrigerator until ready to use.

Place 3 tablespoons of water in a small microwavable dish. Slowly sprinkle packet of gelatin over water. Let gelatin sit for 3-5 minutes. Then, microwave gelatin mixture for 20 – 30 seconds, making sure gelatin has fully dissolved. Let gelatin cool to lukewarm.

In another mixing bowl, combine 2 packages of room temperature cream cheese, mix until smooth. Add the powdered sugar and vanilla, mixing until smooth. Add the cooled gelatin mixture and mix thoroughly.

Take ½ cup of the hot fudge sauce and microwave it 20-30 seconds to help liquefy it. Then add 2 tablespoons of heavy whipping cream and stir to combine. Set aside to cool.

Divide your cream cheese mixture into 3 bowls. In a small bowl, place ½ cup of cream cheese mixture. In a medium size bowl place half of the remaining cream cheese mixture. Leave the remaining cream cheese mixture in the mixing bowl. You should now have 3 bowls with cream cheese mixture in them.

To make the vanilla ring: In the bowl that has ½ cup of cream cheese mixture and ½ cup of the whipped Dream Whip. Gently fold the Dream Whip into the cream cheese mixture. Set aside.

To make the strawberry ring: To one of the other bowls, add 1/3 cup of the strawberry sauce. Mix well. Then add ½ of the remaining Dream Whip mixture and gently fold to combine. Set aside.

To make the chocolate ring: To the remaining bowl of cream cheese mixture, add the cooled hot fudge sauce that has been mixed with heavy whipping cream. Mix well. Then add the remaining ½ of the Dream Whip and gently fold to combine. Set aside.


Take the cooled pie crust and place a 6” x 2” food ring in the center of your pie crust. Then place a 3” x 2” food ring in the center of the 6” ring. You now have 3 rings to fill with cream cheese mixture. First, fill the 3” food ring with the vanilla cream cheese mixture. Smooth the top even with the food ring. Then fill the second ring, by carefully spooning the strawberry mixture inside, between the 3” ring and the 6” ring. Again, level the top with the food ring. Next, place the chocolate mixture in a piping bag with the end snipped off. Slowly pipe the chocolate mixture between the side crust and the 6” ring, making sure to level it even with the other rings. Once the 3 flavors have been placed in the rings, carefully lift food rings straight up and give the pie a gentle shake so the fillings will flow together. Place pie in the refrigerator for 5-6 hours to set.

Once pie has set, take some additional hot fudge sauce and carefully spread a thin layer over the chocolate ring. Take some additional strawberry sauce and carefully spread over the strawberry ring. Garnish pie with whipped cream and a mini ice cream cone.

NOTE: You may have some of your cheesecake mixtures left over. This can be a snack for the cook – layer it in a parfait glass and place in refrigerator to set.

Pretty Woman:
Welcome to Hollywood – the land of dreams! Pretty Woman’s Pretty Neapolitan Pie is a pie-reproduction of the movie Pretty Woman. A slice of this pie is sure to be as impressive as the main actress, Vivian (aka Julia Roberts), herself. In this pie, you will find three flavorful rings that mimic Neapolitan ice cream. The chocolate ring portrays not only the dark life Vivian has lived prior to meeting Edward, but also the brown dress she wears while attending the polo game where she sadly discovers that Edward has revealed to his attorney that she is actually a hooker. The strawberry (pink) ring in this pie represents the ‘getting to know each other’ scene where during their conversation Edward encourages Vivian to try a strawberry with the champagne, as it brings out the flavor of the champagne. I believe the pink is also symbolic of the sophisticated woman she is striving to become while trying to fit into Edward’s extravagant world. And last, but definitely not least, the white ring depicts the iconic white dress Vivian wears for the shopping spree of her life on Rodeo Drive. But even more importantly, the white represents the white limousine (white horse) that pulls up outside Vivian’s apartment. Inside is her knight in shining armor which is eager to climb the fire escape to rescue her for a ‘happily ever after’ ending. Yes, Hollywood is the land of dreams, and Vivian, the Pretty Woman, absolutely found her dream in Hollywood.
