Gonna Make a Mint Off This Pie

Crust
20 Mint Oreo cookies, finely crushed
¼ teaspoon salt
4 tablespoons butter

In a large bowl, stir all of the crust ingredients until well-combined. Pat into the bottom and up the sides of a 9” pie plate. Bake at 350 degrees for 7-10 minutes or until set. Let cool completely before filling.

Filling
1/3 cup all-purpose flour
2 1/3 cups half-and-half (fat free works fine)
1 cup granulated sugar
2 oz. unsweetened chocolate, chopped
1 oz. semi-sweet chocolate, chopped
½ teaspoon pure mint extract
3 egg yolks
2 tablespoons unsalted butter, sliced into pats
½ cup Andes Crème de Menthe Baking Chips

For the chocolate layer, slightly beat the egg yolks in a small bowl. Set aside. In a medium saucepan, stir the half-and-half and flour constantly over medium-low heat, whisking until flour dissolves, for about 2 minutes. Add the sugar and both chocolates; whisk constantly until thickened and bubbly. Cook and stir constantly an additional 2-3 minutes. Remove from heat. Add a small amount of the chocolate pudding to the egg yolks while whisking rapidly to temper the yolks. Pour this mixture into the saucepan of chocolate pudding, stirring constantly for 1 ½ to 2 minutes. Remove from heat; add the butter and the mint extract stirring until the butter is melted and fully incorporated into the pudding. Transfer the pudding into a bowl and immediately cover with plastic wrap, pressing it directly onto the pudding to prevent a skin from forming. Set in the refrigerator to chill until the pudding is set, a minimum of three hours.

Whipped Cream Topping
1 ½ cup heavy cream
2 tablespoons powdered sugar
¾ teaspoon pure vanilla extract
2 tablespoons piping gel

To make the whipped cream, use an electric mixer to beat the heavy cream, sugar, piping gel, and vanilla until stiff peaks form. Decorate the top of the pie with the whipped cream, and sprinkle with additional Andes baking chips if desired.
