Glorious Gluten Free Tastes like Moms Apple Pie

Glorious Gluten Free – “Taste like Mom’s” Apple Pie
Crust:
1 1/2 cup Pillsbury Gluten Free Multi-Purpose flour blend
1 stick salted butter – chilled and cubed
1 large egg
¼ teaspoon salt
2 tablespoons sugar
¼ cup give or take – ice water
Whisk together all of the dry ingredients, add in cubed butter and blend together with a pastry cutter until pea sized and crumbly. Add large egg and begin kneading together with your hand. Once incorporated, slowly add the ice water (but not the ice) little by little until you can form the dough into a ball. Refrigerate for at least an hour or overnight for best results. Note, this is another pie dough that is not very structurally strong so you will do better to roll it out between two sheets of wax paper before transferring to your pie pan.
Filling:
2-3 cups Jonathan apples or your favorite variety
1 ¼ cup sugar
3-4 Tablespoons tapioca
4 Tablespoons melted butter
1 ¼ teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon freshly grated orange peel (or dried if none is available)
Mix apples, sugar, tapioca, orange peel, spices, and melted butter together until fully incorporated. Pour into prepared Gluten Free crust and decorate with cut out pie dough flowers. Brush with heavy cream and dust with sugar. Bake for 1 ½ hours at 325 degrees.
