Carmelized Banana Pie

Caramelized Banana Pie

Crust:

1 Package vanilla Oreos
½ cup butter

Place the cookies in the blender and blend on high speed until finely crushed. Melt the butter in the microwave on high approximately 1 minute. Slowly pour the melted butter into the cookie crumbs while tossing until blended. Lightly spray pie plate with oil. Press into a 9” deep dish pie plate. Place in freezer to set.

Bottom Layer

1 Tbsp butter
2 tsp packed brown sugar
2 Tbsp heavy whipping cream
¼ tsp salt
3 ripe medium bananas sliced

Melt butter in medium frying pan over medium high heat. Add brown sugar, cream and salt. Boil gently, whisking often for 1 minute. Remove from heat and let stand 1 minute. Stir in sliced bananas then arrange over crust in an even layer. Cool in the refrigerator.

Filling:

2 3 1/8 oz instant banana pudding
3 cup heavy whipping cream

Pour whipping cream in a mixing bowl, add instant pudding. Beat until well blended and light and fluffy.
Place the pudding mixture on top of the caramelized bananas and cool until set.

Garnish:

¾ cup heavy whipping cream
¼ cup confectioner’s sugar
¼ tsp vanilla bean paste

Whip all ingredients together until stiff. Spoon into star tipped pastry bag. Swirl into rosettes around the edge just inside the crust. Keep cold in the refrigerator until ready to serve.
