Purple Hawaiian Sweet Potato Pie

Crust:


Purple Hawaiian Sweet Potato Pie

Ingredients:
Crust (makes two)
2 cups chopped pecans
½ cup graham cracker crumb
½ cup brown sugar
½ melted butter

Pre heat the oven to 350. Blend dry ingredients in a bowl, add melted butter and blend together. Place 1 ½ cup of pecans mixture in to a 9” pie pan, use the back of a spoon and press crumb into the pie pan. Use another pie pan to press the crumb down, place in a pre heated 350 degree oven for 7 minutes.

Purple Sweet Potato Filling Ingredients:
1 pound Hawaiian Purple Sweet Potato
3/4 cup Granulated Sugar
1 tsp ground cinnamon
½ tsp Salt
½ tsp Ground Ginger
¼ tsp Ground Cloves
2 large eggs
1 can (14 oz) Sweetened Condensed Milk

Sweet Potato Filling:
Bake Sweet Potato is a 350 degree over for approximately 1 hour. Peal the cooled baked sweet potato and place in a food processor, process until smooth.

Mix sugar, cinnamon, salt, ginger, cloves in small bowl and set aside. Beat eggs in large bowl. Stir in sweet potato and sugar and spice mixture. Gradually stir in the sweetened condensed milk.

Pour into the two pie shells Bake in preheated oven bake for 40 – 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours.

Coconut Whipped Cream
2 cups of whipping cream
½ tps coconut flavoring
¼ cup toasted coconut flake

Whip cream to stiff peak, fold in coconut flavoring and toasted coconut flake. Pipe along the edge of the cooled pie.

For an added touch but this will make 4 pies, please double the crust. Prepare an orange sweet potato batch of filling, same as above using orange sweet potato in place of the purple sweet potato. While preparing the pie use a 3 inch steal baking ring and place on the unfilled pie crust. Fill the center of the ring with orange sweet potato filling, fill the outside of the ring with purple sweet potato filling. Remove the steal ring and using a knife and make a star design in the pie.
