Last Minute Cherry Pie

Last Minute Cherry Pie – Patricia Smith Deltona,Florida 2016

Crust
3 cups all purpose flour
1 ½ cups Crisco
1 teaspoon salt
1 cold egg
1 Tablespoons white vinegar
6-7 Tablespoons ice cold water

Mix flour, salt Crisco until it looks like course crumbs,
Mix egg, vinegar and cold water by whisking put into flour mixture
Roll into ball pat into a disk and refrigerate for 10=15 minutes .Roll out bottom crust refrigerate
Until ready to fill.

Almond Crumb Topping
¾ cup flour
2/3 cup sugar
¼ cup melted butter
1 teaspoon vanilla bean
1/3 cup almonds
Combine flour, sugar ; add butter, vanilla bean toss and add almonds.
Filling
1 can of Comstock cherry pie filling
4 cups of dark morello cherries
½ cup dried sweet cherries
1 ¼ cups of sugar
3 tablespoons clear gel
1 teaspoon of red food coloring
1 teaspoon almond flavoring

Mix sugar and clear gel together toss in cherries ,flavoring and food coloring. Spoon mixture into crust add Almond crumb topping and bake at 400 degrees for 35 mins. Cool before serving
