Serves 8
Crust
1.5 c. graham cracker crumbs
5 T. melted butter
3 T. sugar
Mix graham cracker crumbs and sugar, add the melted butter and press into a 9-10 inch pie plate. You may not use all of it if you use a shallow pan.

Filling
7 oz dark chocolate
1 can dulche de leche

Warm dulche de leche over low heat, add chocolate, and heat until combined. Stir frequently. Poor into cooled pie crust. Adjust amount for pan size.

Dust with a very light layer of graham cracker crumbs. Allow to cool.

Cream Cheese Layer
8oz cream cheese
8oz cool whip
1/2 cup powdered sugar
1/2-3/4 c diced pineapple
Beat cream cheese and sugar until smooth. Fold in Cool Whip. Set aside 1/3 of this layer. Fold the pineapple into the 2/3 of the cream cheese. Spread on pie.

Vanilla Cream Layer
5/8 C. sugar
1/4 t. Salt
1/4 C. Corn Starch
1.5 C. Cream
1 C. milk
5 Egg Yolks
1 T Vanilla Extract
2 T Butter

Mix sugar, salt, and starch in a pot. In a bowl, whisk egg yolks, cream, and milk slightly. To the pot, slowly add the egg yolk/cream/milk mixture. Heat over medium heat, whisking frequently, until thick and bubbling (but not rapidly boiling). Once the cream is bubbling, continue to cook and whisk for 30 more seconds. Finally, add the butter and vanilla and mix until the cream is smooth. Press mixture through a strainer. Set aside.

Cut 2-4 bananas, and cover the cream cheese layer with bananas and around 1/2-3/4 inch layer warm vanilla cream. Place a plastic sheet over the cream in order to prevent a skin from forming on the cream filling. Place in refrigerator until completely chilled.

Top with remaining 1/3 of cream cheese.

Strawberry Layer
1 c. sugar
2 c. mashed strawberries (frozen work well)
1 c. water
Place all ingredients in a pot, bring to a boil, and boil for ten minutes. Stir frequently. Strain and collect the syrup in a bowl.
Take 2-3 T. cornstarch in a bowl, and three T. of the cooled syrup. Make a paste. Add drops of syrup until all of the starch is incorporated into the paste. Slowly add another three T of the syrup and stir. Place all of the syrup and the starch into a pot, bring to a bowl, bowl for one minute or until thick and clear. Remove from heat, let cool, then chill.

Coat 1-2 pints of fresh strawberries in the chilled glaze and arrange on the pie as you like. Strawberries may be sliced, quartet, and/or kept whole.



Whipped Cream
4 oz white chocolate
2.5 C cream

Heat one cup of cream and the white chocolate until chocolate is melted. Cool and chill overnight.
Whip 1.5 cups of cream to soft peaks, add white chocolate, and beat until stiff peaks. Top Pie.

Garnish with chocolate, pineapple, strawberries, and nuts, as/if desired. Decorate like a banana split sundae, if desired (with cherries on top). Top with nuts, strawberries, chocolate, or chocolate covered strawberries, if desired.

Chill for at least four hours.
