Cherry Mocha Latte Pie

Cherry Mocha Latte

2/3 cup plus 2 tbsp Crisco shortening
2 cup all purpose flour
1 teaspoon salt
2 tablespoons cocoa
5-6 tablespoons cold water

Chocolate Base:
6 Tbsp butter (No substitutes)
2 Squares (1 ounce each) unsweetened chocolate
1 cup sugar
2 Eggs, beaten
½ teaspoon vanilla
½ cup all purpose flour

Filling 1
4 Cups sour cherries
1 ½ Cups sugar
3 Tbsp corn starch

Filling 2
¼ cup sugar
1 envelope unflavored gelatin
1 cup water
6 ounces white chocolate baking chips
3 egg yolks
1 ¼ cup whipping cream
2 tablespoons strong coffee

1 cup cherry filling
Whipped Cream
Chocolate Curls (if desired)

For the crust: Cut shortening into flour, cocoa & salt until particles are the size of small peas. Sprinkle in water, 1tbsp at a time, tossing with a fork until all flour is moistened. Form pastry into a ball, flatten and roll out. Bake at 375 degrees for 10 minutes.
For the base: In microwave bowl, melt butter and chocolate. Stir in sugar until well blended. Add egg & vanilla, mix well. Stir in flour until blended. Pour into partial pre-baked chocolate crust. Bake at 350 degrees for 12 to 15 minutes. Cool.

For filling 1: Mix together & cook in microwave until boils and thickens. Spread 2 cups cherry filling on chocolate base.

For filling 2: In a microwave bowl, combine sugar & gelatin. Add water. Cook until mixture boils and gelatin dissolves. Melt white chocolate in microwave, add to water sugar mixtures. In medium bowl, beat egg yolks. Stir ¾ of hot gelatin mixture into egg yolks, stir until combined.
Return all of the mixture to microwave bowl, cook until mixture bubbles. Remove from microwave, cover, and chill about 45 minutes until mixture is the consistency of unbeaten egg whites. Stir occasionally. In a chilled mixing bowl, beat 1 ¼ cup whipping cream and strong coffee with a mixer until stiff. Fold whipping cream mixture into gelatin mixture. Spoon & spread out on top of cherry filling on chocolate base.
For the garnish: Put additional 1 cup cherry filling centered on top of latte filling. Garnish with additional whipped cream and chocolate curls.
