2014 Professional Recipe

Joyful Almond Coconut

1 1/4 cup King Arthur Flour
1/4 tsp Salt
1/8 tsp baking powder
8 Tbsp unsalted butter
3 Tbsp ice water
Filling 1:
1 cup sugar
2 eggs
1/2 cup softened butter unsalted
1/4 cup King Arthur Flour
1/2 tsp salt
1 cup 1/2 & 1/2
1 1/2 cup coconut
1 tsp coconut extract
1 tsp vanilla extract

Crust:Combine dry ingreds in food processor and process until mixed. Cut cold butter into 8 pieces and scatter on top of dry ingreds. Process till butter is pea sized. Add water and process til dough just forms ball. Wrap in plastic and refridgerate for at least 20 mins. Roll dough out into 9" pie pan and parbake for 10 min in 350 degree preheated oven.
Filling: Cream butter and sugar together. Add eggs, flour, salt half & half, extracts. Mix well. Add coconut. Sprinkle handful of semi sweet chocolate chips in pie shell. Pour filling over. Bake in 325 degree preheated oven for 35-45 mins or until set. Cool slightly.
Spread a THICK layer of chocolate ganache over pie. Decorate with whole almonds.
