Crust:Preheat oven 350

2 cups graham cracker crumbs
¼ cup of light brown sugar -packed
6 tablespoons of melted butter.

Mix well press into pie plate and set aside to prepare filling


5 chocolate moon pies (cut in small slices)
24 ounces of soft cream cheese
1 teaspoon vanilla bean paste.
3 extra large eggs
1/3 cup sour cream
¾ cup sugar
Chocolate Ganache ( see recipe)

Ingredients:- for bottom crust of pie and top of finished pie
1 pound semi sweet chocolate chips
1 teaspoon butter
1 pint of regular whipping cream
1 teaspoon white corn syrup
This is only used as the topping for the pie


In a mixing bowl whip cream cheese and sugar add vanilla bean paste continue to mix until creamy. Add eggs one at a time whipping well. Add sour cream and continue to mix. Remove from mixer fold in moon pie cookies by hand. Pour into prepared graham cracker crust and bake for 30-35 minutes at 360 degrees. Let cool and garnish top with ganache cool completely before cutting.
