2014 Amateur Recipe

Annie's Key Lime pie


Crust
1C. (4oz.) graham crackers
3T. sugar
1T. lime zest
1/2 C. pistachios
4T. melted butter

Process all ingredients except butter in food processor and process until grahams are ground fine, then stream in the melted butter until all is incorporated. Press crust into a nine inch pie pan and bake at 350 degrees for 10-15 minutes until slightly browned.


Filling
1/4 C. water
1 1/4 t. gelatin
1/4C. sugar
1T. lime zest
1 8-oz. block cream cheese
14oz. sweetened condensed milk
1/3C. instant vanilla pudding mix
3/4C. lime juice
1t. vanilla extract

Put gelatin in water to soften. Process sugar and lime zest for one minute, add cream cheese and process well. Scrape down sides of work bowl. Add sweetened condensed milk and pudding mix and blend until well mixed.

Put gelatin mixture into microwave and cook on high for 15 seconds. Stir to dissolve and add along with juice, gelatin and vanilla to processor and mix well.

Pour into cooled pie shell, smooth top and refrigerate for at least five hours. Garnish with whipped cream, lime slices, and chopped pistachios if desired.
