Crust
1 1/2 cups of Flour
2/3 cup of Crisco chilled
1/4 cup of ice water
1/2 tsp of salt
dash of lemon
Filling 1:

7 Cups of apples (Preferable Granny Smith)
3/4 Cups brown sugar
3/4 Cups granulated sugar
1 tsp Cinnamon
1 tsp vanilla
2 Tlbs hot pepper jelly
3/4 cups of shredded cheddar cheese
1/4 cup of flour

Toppings:
1 Cup of flour
1/2 cup of brown sugar
1/2 cup of cold butter
dash of cayenne pepper

Instructions:
CRUST: Put flour, salt and crisco in bowl. Cut in until it forms crumbs. Mix in ice water and lemon to form a dough ball. Do not over mix. Roll out dough and put in your pie dish. Crimp around all the edges on the crust. Set aside.
FILLING: Peel & slice all your apples in a large bowl. Slice them thin. Mix in your sugars, cinnamon, vanilla & hot pepper jelly. Let them set for 10 minutes until they form juice. Add 1/4 cup of flour and mix.
Put shredded cheddar cheese in bottom of pie crust, add your apple mixture.
TOPPING: Mix flour, cayenne pepper & brown sugar in a bowl. Cut in butter until the texture becomes crumbs. Sprinkle over apple mixture. Bake in the oven at 395 degrees for 15 minutes. Turn oven down to 350 degrees and bake for another 45 minutes. Let rest before you cut.
