Blast of Berries Fruit Combo

2012 Amateur Fruit/Berry

1 1/2 cups all-purpose flour
2 tsp sugar
1/2 cup Crisco Shortening
3 Tbsp salted butter
4-5 Tbsp cold water
Whisk together flour and sugar. Cut in shortening and butter until pea size pieces form. Add cold water 1 tablespoon at a time until dough ball forms. Roll out on floured surface to fit 9-inch deep dish pie plate.

8 oz pkg cream cheese
1 tsp vanilla extract
2 large eggs
1/2 cup sugar
Beat cream cheese, eggs, vanilla extract and sugar together. Pour into prepared crust. Bake in 350 °F oven until set, 18 to 20 minutes. Cool.

1 1/4 cups water
1/2 cup plus 1 Tbsp sugar
1/4 cup cornstarch
3 oz box Raspberry Jell-O
1 tsp lemon extract
2 cups fresh blackberries
2 cups fresh red raspberries
2 cups fresh blueberries

1 cup whipping cream, whipped
1 Tbsp three berry syrup
1/4 cup powdered sugar
Fresh berries for garnish
In large non-stick sauce pan, combine water, sugar and cornstarch, mixing well. Cook over medium heat until thick and clear. Add Jell-O, stirring until dissolved. Add lemon extract, then fold in fresh berries. Cool. Spoon berry mixture over filling. Whip cream and syrup until soft peaks form. Add sugar and continue beating until stiff peaks form. Frost or pipe pie with cream. Garnish with fresh berries. Refrigerate several hours before serving.
