Lover’s Pie
2012 Amateur Crisco Classic Chocolate Category

Crust
1 pkg Oreo cookies
2/3 cup butter flavor Crisco
Crush Oreo cookies and melt the butter flavored Crisco in the microwave. Add the melted Crisco slowly to crushed cookies. Press into 9” heart shaped pie dish. Freeze.


Filling
1/2 cup margarine
3/4 cup sugar
4 squares melted unsweetened chocolate, cooled
2 eggs
1 cup heavy whipping cream
Cream together, margarine and sugar. Stir in cooled chocolate. Add 1 egg at a time beating 5 minutes between each egg. Whip the heavy whipping cream until stiff. Fold the chocolate mixture into the whipped cream. Spoon into the pie dish, smoothing out the top. Chill until firm.

Topping
1 cup sugar
2 Tbsp corn starch
8 oz can 7-Up
1 tsp lemon juice
3 oz box strawberry jello
1 pint strawberries
Combine sugar, corn starch and 7-Up in a small sauce pan. Heat stirring constantly until mixture becomes clear and thickens. Stir in strawberry jello and lemon juice. Cool. Clean strawberries and slice in half. Dip in the strawberry jello mixture and place on top of the set chocolate filling until the filling is covered. Cool.

Garnish
3/4 cup heavy whipping cream
1/4 cup confectioner’s sugar
1/4 tsp vanilla bean paste
Whip all ingredients together until stiff. Spoon into star tipped pastry bag. Swirl into rosettes around the edge just inside the crust. Keep cold in the refrigerator until ready to serve.
