GOLDEN RAISIN CHEESE PIE 2012 Amateur Raisin CRUST 2 cups firmly packed shredded phyllo dough(Kataifi) 2 Tbsp granulated sugar 1/4 tsp cinnamon 1/4 cup melted butter Cut the phyllo dough into 1/2 inch strips so it is about the texture and size of shredded coconut. Combine the shredded dough with the rest of the ingredients and press over bottom and up sides of a 9-inch pie dish. Set aside while preparing filling. Bake in a preheated 350 degree oven 15 minutes. Remove from oven while preparing filling. FILLING 1 cup golden raisins or orange-flavored raisins 1/2 cup orange juice (2) 8 oz pkgs cream cheese, softened 1/2 cup granulated sugar 1 tsp lemon juice 1/2 tsp vanilla 2 large eggs Preheat oven to 350 degrees. In a small bowl, plump raisins in 1/2 cup orange juice for about 10 minutes. In a medium bowl, beat the cream cheese, sugar, lemon juice, and vanilla until fluffy. Add eggs, beating on low speed just until combined. Stir in raisins and pour into prepared crust. Bake for approximately 40 minutes or until the filling is set and only slightly shakes in the middle. Remove from oven and cool completely before refrigerating. Refrigerate 2 hours. CARAMEL SAUCE 1/2 cup brown sugar 1/2 cup butter 2 Tbsp light corn syrup 1/2 tsp vanilla Combine the brown sugar, butter, corn syrup, and vanilla in a saucepan. Bring to a boil over medium heat and simmer for 3-4 minutes, or until just slightly thickened. Let cool slightly and serve over each slice of pie.
