This is the Bomb! Banana Cream Pie 2012 Professional Cream COOKIE CRUST 3 cups nilla cookies 1/2 cup butter, melted 2-3 tablespoons sugar Pre-heat oven to 350 degrees F. In food processor, grind cookies into crumbs. Transfer crumbs to mixing bowl. Add sugar and melted butter, toss with fork. Pour into pie dish and press into bottom and up the sides. Bake for 15 minutes, let cool and fill with your favorite filling. FILLING 3 tablespoons corn starch 1 ? cups heavy cream 14 oz can Eagle Brand sweetened condensed milk 3 egg yolks, beaten 1 tablespoon butter 1 teaspoon vanilla 2 medium bananas, sliced 1/4 cup Hot fudge Ice cream topping sweetened whipped cream for garnish In a heavy saucepan, dissolve the cornstarch in the cream; stir in sweetened condensed milk and egg yolks. Cook and stir until thick and bubbly. Remove from heat add butter and vanilla extract. Pour one third of custard into cookie crust, top with sliced bananas. Pour next third and top with fudge. Top with remaining custard and chill for 2 or more hours. Garnish with sweetened whipped cream. Refrigerate leftovers.
