Chocolaholic Lovers Pie
2012 Crisco Classic Chocolate
CRISCO CRUST
1 1/4 cups all purpose flour
1/2 tsp salt
1/2 cup Crisco all vegetable shortening
4 to 5 Tbsp ice water
Preheat oven to 450 degrees. Spoon the flour into measuring cup and level. Mix flour and salt in a medium bowl. Cut in shortening using pastry blender or two knives until flour is blended and forms pea size chunks. Sprinkle with 1 tablespoon of water at a time. Toss lightly with a fork until dough forms a ball. Roll out on lightly floured board to fit a 9-inch deep dish pie plate with 1/2 inch overlap. Fold under and flute edges. Prick bottom and sides with a fork. Bake at 450 degrees for 12 minutes or until golden brown. Cool on rack completely before filling.
LAYER 1
6 oz cream cheese, softened
6 oz semi-sweet chocolate, melted and cooled
1/4 cup half & half
1 tsp Kona coffee extract
3/4 cup heavy cream, whipped
Place cream cheese, half & half, and coffee extract in a medium bowl. Beat on high until well-blended and smooth. Beat in cooled chocolate. Beat well with wooden spoon, and then fold in whipped cream. Carefully spread in pie shell. Smooth top and place in freezer.
LAYER 2
6 oz cream cheese, softened
6 oz white chocolate, melted and cooled
1/4 cup half & half
1 tsp pecan extract
3/4 cup ground toasted pecans
3/4 cup toffee baking bits
3/4 cup heavy cream, whipped
Repeat instructions for Layer 1 with Layer 2. Carefully fold in pecans and toffee bits when folding in whipped cream. Spread over Layer 1 and smooth top. Chill until set.
LAYER 3
6 oz cream cheese, softened
6 oz milk chocolate, melted and cooled
1/4 cup half & half
1 tsp pecan extract
3/4 cup heavy cream, whipped
Repeat instructions for Layer 1. Spread over Layer 2 and smooth top. Chill until set.
TOPPING
2 1/2 cups heavy cream
1/4 cup powdered sugar, sifted
1 tsp pecan extract
Place topping ingredients in a medium bowl and beat on high until stiff peaks form. Fill pastry bag with medium tip and pipe topping all over pie.
GARNISH (optional)
1/4 cup ground pecans
1/4 cup toffee bits
Sprinkle pecans and toffee bits on top of pie before serving.
