2011 Contest Recipe

Pineapple Coconut Custard Pie


1 1/2 cups flour
2 teaspoons sugar
1/2 cup Crisco Shortening
4 tablespoons cold water with 1 teaspoon lemon juice

Whisk flour and sugar together. Cut shortening into mixture until pea size pieces form. Slowly add water/lemon juice mixture, tossing with a fork until dough ball forms. Form into a disk and refrigerate for 20 minutes. Roll to fit 9-inch pie dish. Prick bottom and sides with a fork. Bake at 425 degrees for 20 minutes or until golden brown. Cool.
