Fantastico Neapolitan Pie

Fantastico Neapolitan Pie
Serves 6-8
Crust:
2 cups sugar free shortbread cookie crumbs
6 tbsp melted butter
Mix ingredients in a small bowl with a fork until well mixed. Press on bottom and sides of 9 inch pie plate. Freeze until ready to use.
Layer 1:
4 oz cream cheese, softened
4 oz sugar free dark chocolate, melted and cooled
3/4 cup milk
1 oz. pkg of sugar free vanilla instant pudding
1 tsp Kona coffee extract
3/4 cup heavy cream, whipped
Place cream cheese and milk in medium bowl. Beat until well blended and smooth. Beat in cooled chocolate. Add pudding and extract. Beat well with wooden spoon and fold in whipped cream. Carefully spread in pie shell. Smooth top and refrigerate.
Layer 2:
4 oz cream cheese, softened
4 oz sugar free white chocolate, melted and cooled
3/4 cup milk
1 oz pkg sugar free vanilla instant pudding
1 tsp strawberry extract
1 drop red food coloring
3/4 cup heavy cream, whipped
1 cup strawberries, diced large
Repeat with directions for Layer 1 with first 7 ingredients. Carefully fold in strawberries and spread over first layer.
Layer 3:
4 oz cream cheese, softened
4 oz sugar-free white chocolate, melted
3/4 cup milk
1 oz. pkg sugar-free instant vanilla pudding
1 tsp rum extract
1 drop green food coloring
1/2 cup ground toasted pistachios-no salt
3/4 cup heavy cream, whipped
Repeat above instructions for the first two layers. Smooth top and chill until set.
Topping:
2 cups of heavy cream
2 tbsp of Splenda
1 tsp rum extract
Garnish-shredded sugar free chocolate
Place topping ingredients in medium bowl and beat on high until stiff. Fill pastry bag with medium strips and pipe all over pie. Sprinkle with shredded chocolate if so desired.
