2011 Contest Recipe

Fruity Fruit

FRUITY FRUIT
 
Baked Pie Crust:
 
1 1/2 C. Flour
1Tbs. Sugar
1/2 Tsp. Salt
1/2 C. Cold Crisco Shortening
1/4 C. Cold Water
 
Cut cold shortening into flout mixture until particles are size of small peas.  Sprinkle in water, tossing with fork until all flour is moistened and pastry can be formed into ball.
 
Filling:
 
1 1/2 C. White Chocolate Chips
1/4 C. Evaporated milk
1  8oz. package Cream Cheese, softened
1Tsp. Strawberry Extract
2 Drops Red Food coloring
In microwave safe bowl, place white chocolate chips and evaporated milk.  Microwave 1 minute, stir.  If necessary, microwave and additional 15 seconds stirring until chips are melted.  Beat in cream cheese, strawberry extract, and red food coloring.  Spread on bottom of baked pie shell.
 
Fruit:
 
1/2 C. Blueberries
3 C. Strawberries
4 Kiwi
1 C. Raspberries
Arrange fruit in decorative pattern on top of filling.
Garnish with whipped cream.
