2011 Contest Recipe

Saturday Nite Pie

“Saturday Nite” Pie

Use 9/9.5 inch plate.
Serves eight.

Crust
26 vanilla sandwich cookies (I use Famous Amos Brand or Vanilla Oreos)
5 T. butter
Place whole cookies in food processor and pulse until cookies resemble wet sand. Melt butter and pour over cookie crumbs and mix until butter is evenly distributed. Press crumbs evenly into pie pan. Bake crust at 375 degrees for 10 minutes. Let cool.

Chocolate Layer:

2 TBS butter
2 TBS corn syrup
2TBS cream
1/3 cup chocolate chips (semi-sweet)
1 cup powdered sugar

Mix butter, corn syrup, cream and milk and heat over medium heat until boiling. Stir constantly. Add chocolate chips and stir until melted. Once fully combined, slowly add powdered sugar. Mix completely, then carefully spread the chocolate onto the bottom of the crust (may include a thin layer around the sides of the crust in order to hold the crust together) .
It cools quickly, so you must spread immediately.

Filling

6 oz. Cream Cheese
1/2 C. Powdered Sugar
6 oz. Cool Whip

Beat cream cheese and powdered sugar until smooth. Fold in the Cool whip. Spread onto cooled chocolate later and chill in refrigerator.

Strawberry Topping

- Fresh Strawberries (enough to cover pie) (May be sliced or whole, or a combination of sliced and whole. Sliced strawberries should be served immediately.)
- (around) 1/2 Stawberry Jelly (not jam)

Combine strawberries and jelly and gently mix until berries are coated with jelly. Place strawberries on chilled cream cheese layer. Include the jelly and use to cover the entire pie. Chill for three hours.

Options :
Garnish with chopped nuts (Pecans, walnuts, almonds, or nut toppings).
Include chocolate covered strawberries on top of the pie.
